On which day is a claimant's data really gone? The question sounds administrative until someone else answers it for you: from May to late September 2025 a preservation order in The New York Times v. OpenAI kept output logs that OpenAI's API customers without zero data retention had expected to be deleted after 30 days, in a copyright case none of them was party to (Volume 11, Chapter 7 tells the case). Any such customer that had promised its own users deletion after 30 days broke that promise through no action of its own.
